Lu Rou Fan
Ingredients
- 250 g pork belly (diced)
- 1-2 tablespoons cooking oil
- 35 g shallots (chopped)
- 1 clove garlic (chopped)
- 4 pieces dried mushrooms (diced)
- 1 cup rice grains
- 240 ml water
- 2 eggs
- Chew Kee Traditional Braised Sauce
Method
- Wash rice thoroughly. Add 240 ml water and cook in rice cooker (about 30 minutes).
- Boil eggs in hot water for 8-12 minutes. Transfer to ice water, then peel.
- Heat oil in a pot. Fry pork belly until lightly browned and dry.
- Add shallots and fry until fragrant.
- Add garlic and mix well for 30 seconds.
- Add diced mushrooms and stir.
- Pour in Chew Kee Traditional Braised Sauce and eggs. Bring to a boil.
- Cover and stew for 30-45 minutes on low heat.
- Serve over steamed rice.
