Lu rou fan — Taiwanese braised pork over rice

Lu Rou Fan

Ingredients

  • 250 g pork belly (diced)
  • 1-2 tablespoons cooking oil
  • 35 g shallots (chopped)
  • 1 clove garlic (chopped)
  • 4 pieces dried mushrooms (diced)
  • 1 cup rice grains
  • 240 ml water
  • 2 eggs
  • Chew Kee Traditional Braised Sauce

Method

  1. Wash rice thoroughly. Add 240 ml water and cook in rice cooker (about 30 minutes).
  2. Boil eggs in hot water for 8-12 minutes. Transfer to ice water, then peel.
  3. Heat oil in a pot. Fry pork belly until lightly browned and dry.
  4. Add shallots and fry until fragrant.
  5. Add garlic and mix well for 30 seconds.
  6. Add diced mushrooms and stir.
  7. Pour in Chew Kee Traditional Braised Sauce and eggs. Bring to a boil.
  8. Cover and stew for 30-45 minutes on low heat.
  9. Serve over steamed rice.
