Braised Chicken Feet

Ingredients

  • 300 g chicken feet
  • Mushrooms — fragrant or flower mushroom (as desired)
  • 2 cloves garlic (minced)
  • 1 thumb-size ginger (sliced thin)
  • Chew Kee Traditional Braised Sauce
  • Vegetable oil for frying
  • Scallions for garnish

Method

  1. Wash and pre-soak mushrooms one hour before cooking.
  2. Chop off the nails on feet, clean thoroughly, and pat dry.
  3. On medium flame, heat oil in a pot with a see-through lid. Add chicken feet in small batches and cover immediately.
  4. Fry for 5 minutes or until feet turn brown and stop splattering.
  5. Turn off fire and wait 1 minute before opening lid.
  6. Remove chicken feet and soak in cold water for 1 hour. Drain and set aside.
  7. Heat oil on medium flame. Add garlic and ginger, fry until garlic turns brown.
  8. Add mushrooms and cook for 2 minutes, stirring constantly.
  9. Add Chew Kee Traditional Braised Sauce and chicken feet.
  10. Bring to a rolling boil, then reduce to low heat. Cover and simmer for 1 hour, stirring occasionally.
  11. Serve and top with scallions.
