Braised Chicken Feet
Ingredients
- 300 g chicken feet
- Mushrooms — fragrant or flower mushroom (as desired)
- 2 cloves garlic (minced)
- 1 thumb-size ginger (sliced thin)
- Chew Kee Traditional Braised Sauce
- Vegetable oil for frying
- Scallions for garnish
Method
- Wash and pre-soak mushrooms one hour before cooking.
- Chop off the nails on feet, clean thoroughly, and pat dry.
- On medium flame, heat oil in a pot with a see-through lid. Add chicken feet in small batches and cover immediately.
- Fry for 5 minutes or until feet turn brown and stop splattering.
- Turn off fire and wait 1 minute before opening lid.
- Remove chicken feet and soak in cold water for 1 hour. Drain and set aside.
- Heat oil on medium flame. Add garlic and ginger, fry until garlic turns brown.
- Add mushrooms and cook for 2 minutes, stirring constantly.
- Add Chew Kee Traditional Braised Sauce and chicken feet.
- Bring to a rolling boil, then reduce to low heat. Cover and simmer for 1 hour, stirring occasionally.
- Serve and top with scallions.
